Directions
Step 1: Place watermelon in a blender. Cover and blend until smooth.
Step 2: Strain, reserving 1/4 cup juice and discard pulp.
Step 3: Place watermelon juice, vodka and lime juice in an ice-filled cocktail shaker. Cover and shake for 10 seconds.
Step 4: Strain into a Moscow mule mug filled with ice. Top with ginger beer.
Step 5: If desired, garnish with watermelon wedge and mint.

- ⅔ c. seeded watermelon chunks
- 1 ½ oz. grapefruit vodka
- Juice of 1 lime wedge
- Ice cubes
- 4 oz. ginger beer
- Watermelon wedge and mint leaves, for garnish
