Step 1: Infuse vodka by muddling chopped pears with vodka in a large mouth jar; let stand at room temperature for at least 30 minutes.
Step 2: Strain vodka and discard pears.
Step 3: Dip rim of cocktail glasses in water and then in sugar; fill each glass with ice.
Step 4: Add 1.5-oz. of pear-infused vodka over ice and top each glass with 5-oz. ginger ale.
Step 5: Garnish with rosemary sprig and pear slices, if desired.
